不同品种桑葚中花色苷的含量及营养成分分析毕业论文

摘 要

桑葚是我国药食同源的传统水果,具有养血补肾、抗氧化、养颜等功效。本研究用UPLC-MS对不同品种的桑葚进行抗氧化有效成分花色苷的定性鉴定,用HPLC对花色苷类成分定量分析,用氨基酸测定仪对其中的营养成分氨基酸进行定量分析,初步评价市场上桑葚品种的优劣。结果表明,不同品种的桑葚中的花色苷种类相同,主要为矢车菊素-3-O-葡萄糖苷、矢车菊素-3-芸香糖苷,其二者含量有异。其中,所测样品中,绵游1号中的矢车菊-3-O-葡萄糖苷的含量最高,而润C 中的矢车菊-3-O-芸香糖苷的含量最高;总的花色苷含量为绵游1号最高,到达44.5%,其次为润C,达到40.9%。对于市场常见的桑葚品种进行了氨基酸测定,结果表明,所有品种中氨基酸含量较高的为天冬酰胺,氨基酸总量含量最高的为2号,其次为7号品种。2号品种中脯氨酸的含量亦为最高。

Analysis of anthocyanin content and nutrient components in varieties Mulberry

Abstract

Mulberry is a traditional fruit with homologous medicine and food in China. It has the effect of nourishing blood, nourishing kidney, antioxidant, and raising skin. In this study, different varieties of mulberry were qualitatively identified by UPLC-MS, anthocyanin, anthocyanins were quantitatively analyzed by HPLC, amino acid analyzer was used to quantitatively analyze the amino acids, and the advantages and disadvantages of mulberry varieties on the market were evaluated. The results showed that the anthocyanins in different mulberry varieties were the same, mainly argillin-3-O-glucosin and argillosin-3-trypsin, and the content of the two was different. Among them, the content of cornflower 3-O-glucoside in Mianyou No. 1 was the highest, and the content of cornflower 3-O-glucoside in RunC was the highest; The total anthocyanin content was the highest in Mianyou No. 1, reaching 44.5 %, followed by RunC, reaching 40.9 %.Amino acids were determined for common mulberry varieties in the market. The results showed that asparagine was the highest content of amino acids in all varieties, and the highest content of amino acids was No. 2, followed by No. 7 varieties. The content of proline in species 2 is also the highest.
